Quinoa Salad Recipe

Salads are best for summer season. They are Light on the stomach, healthy and delicious. They are also a great way to take care of hunger pangs and are a big source of nutrients. Like any other salad quinoa recipe is refreshing, crispy, and delicious.

Quinoa is rich in protein, dietary fiber, B vitamins, and dietary minerals greater than other grains. It can lower the risk of chronic disease,  help in losing weight, balance blood sugar levels,  improve gut health, and is best for people suffering from gluten intolerance. Quinoa contains essential amino acids. It makes up our muscles, bones, skin, and blood. The fiber in quinoa helps in controlling cholesterol, it also lowers the risk of diabetes and heart diseases.

Eating a bowl of quinoa salad daily is healthy and without any side effects. They are full of nutrition and health. Let us look at the ingredients that you would need to make quinoa salad.

INGREDIENTS

1 cup uncooked quinoa,

2 cups water

 1 ½ cups cooked chickpeas

1 medium chopped cucumber

1 medium chopped red bell pepper,

 1 small chopped onion

1 cup finely chopped parsley

¼ cup olive oil

¼ cup lemon juice

1 tablespoon  vinegar

2 cloves minced garlic,

½ teaspoon EveryDay salt

And some black pepper powder for taste,

INSTRUCTIONS

Step 1: Cook the quinoa on medium heat for about 15 minutes. Then Remove from heat, and let the quinoa rest for 5 minutes.

Step 2: In a large bowl, combine the chickpeas, cucumber, bell pepper, onion, and parsley altogether and set aside.

Step 3: For the dressing, In a separate bowl, mix the olive oil, lemon juice, vinegar, garlic, and salt. Make sure to completely blend them and then set them aside.

Step 4: After the quinoa cools down, add it to the serving bowl, and pour the dressing on top. Toss the whole mixture thoroughly and season with black pepper. You can add some more EveryDay Salt if needed.

You can use this salad for about 4 days if kept properly covered in a refrigerator. Serve chilled or at room temperature with your favorite Marinated and Grilled Zucchini, Carrot and Cabbage Slaw, Nutmeg and Cinnamon Apples, Cilantro Lime Corn Pancakes, Grilled Vegetables, Fried Tofu, Vegetable Sandwich, etc.
